Meatball Vegetable Soup
INGREDIENTS:
• 500 g ground beef
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 1 egg
• 1/4 cup breadcrumbs
• Salt to taste
• 1/2 teaspoon black pepper
• 1/2 teaspoon allspice
• 2 tablespoons olive oil
• 2 carrots, sliced ​​
• 2 stalks celery, sliced ​​
• 1 liter water boiled beef
• 1 cup cream
• 1/2 cup chopped parsley
• 3 potatoes, diced
INSTRUCTIONS:
● Add ground beef, half the onion, garlic, egg, crumble bread, salt, pepper and allspice into a bowl to form meatballs.
● Heat olive oil in a large pan and fry the meatballs until golden brown on all sides. Remove and reserve.
● In the same pan, sauté the remaining onion, carrots and celery for 5 minutes.
● Add beef broth and bring to a boil.Add potatoes and simmer for 15 minutes.
● Add the meatballs to the pot and cook for another 10 minutes.
● Combine cream and heat. Add parsley before serving.
