Strawberry Crumble Bars

INGREDIENTS

  • 2 cups fresh strawberries, diced
  • 2 tbsp sugar + 1 tsp cornstarch for filling
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/2 cup cold butter, diced
  • 1 large egg
  • 1 tsp vanilla extract

METHOD

  1. Preheat oven to 350°F and grease an 8×8 pan.
  2. Toss strawberries with 2 tbsp sugar and cornstarch. Set aside.
  3. Mix flour, oats, both sugars, baking powder, cinnamon, and salt.
  4. Work in cold butter with fingers until clumpy.
  5. Mix in vanilla and egg until everything is well combined.
  6. Firmly press two-thirds of the mixture into the base of the pan.
  7. Spread strawberry filling over base.
  8. Sprinkle the leftover mixture over the top.
  9. Bake until golden, 36 to 42 minutes.
  10. Before cutting into pieces, let it cool completely.
