Strawberry Crumble Bars
INGREDIENTS
- 2 cups fresh strawberries, diced
- 2 tbsp sugar + 1 tsp cornstarch for filling
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- 1/2 cup cold butter, diced
- 1 large egg
- 1 tsp vanilla extract
METHOD
- Preheat oven to 350°F and grease an 8×8 pan.
- Toss strawberries with 2 tbsp sugar and cornstarch. Set aside.
- Mix flour, oats, both sugars, baking powder, cinnamon, and salt.
- Work in cold butter with fingers until clumpy.
- Mix in vanilla and egg until everything is well combined.
- Firmly press two-thirds of the mixture into the base of the pan.
- Spread strawberry filling over base.
- Sprinkle the leftover mixture over the top.
- Bake until golden, 36 to 42 minutes.
- Before cutting into pieces, let it cool completely.
