Ingredients
- 1 cup cottage cheese, preferably low-fat
- 3 large eggs
- 1/2 cup vanilla or unflavored protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1–2 tablespoons powdered erythritol or another low-carb sweetener, optional
- 1 tablespoon melted butter or coconut oil, optional
Instructions
- Preheat the oven to 350°F (175°C).
- Add the cottage cheese, eggs, protein powder, baking powder, salt, vanilla extract, and sweetener to a blender.
- Blend until the mixture is completely smooth and creamy.
- Pour the batter into a small loaf pan lined with parchment paper.
- Bake for 25–35 minutes, or until the top is golden brown and the center is fully set.
- Remove from the oven and let it cool for about 10–15 minutes.
- Slice and serve warm or completely cooled.
Tips
Add a bit more low-carb sweetener for a sweeter taste.
For additional taste, you may add cinnamon.
For up to four days, keep leftovers in an airtight container in the fridge.
