Ingredients :
Crust:
1 cup butter, softened
2 cups all-purpose flour
½ cup powdered sugar
Pecan Topping:
2 large eggs
¾ cup brown sugar
1 teaspoon vanilla extract
1 tablespoon melted butter
1 cup chopped pecans
Instructions :
- Prepare the Oven
Preheat oven to 350°F (175°C).
Lightly grease a mini muffin tin. - Make the Crust
In a bowl, mix butter, flour, and powdered sugar until a soft dough forms.
Roll into small balls (about 1 inch).
Press each ball into the mini muffin cups to form a small crust. - Pre-Bake
Bake the crusts for 10–12 minutes, just until lightly set (not browned). - Prepare the Filling.
Combine brown sugar, eggs, melted butter, and vanilla in a separate basin.
Add the chopped pecans. - Bake and fill again.
Put a spoonful of the pecan mixture into each crust.
Bake the cake for 15 to 20 minutes, or until the filling has set. - Serve cold.
Before removing, allow to cool in the pan.
