1 kilo pork

1/4 cup hoisin sauce

2 tablespoons soy sauce

2 tablespoons honey

2 tablespoons brown sugar

2 cloves of garlic minced

1 tablespoon Chinese five-spice powder

1 teaspoon red food coloring (optional)

1 tablespoon sesame oil

2 tablespoons rice wine (mirin)

Preparation: Remove excess fat from the pork for a smooth texture. Cut it and set it aside.
Marinade: Mix hoisin sauce, soy sauce, honey, brown sugar, garlic, five-spice powder, food coloring (if using), sesame oil and rice wine until smooth. Transfer the pork to the top of the bag and make sure it is evenly distributed. Leave it in the refrigerator overnight, or at least a few hours if it’s short term.
Baking: Preheat oven to 350°F. Place the pork on a parchment-lined baking sheet to cool. Roast for 25-30 minutes, tossing occasionally with marinade, until internal temperature reaches 145°F.

Rest: Let the pork rest for 10 minutes before cutting it into pieces to allow it to release its juices.
Variations and Tips:

Substitutions: If hoisin sauce is not available, combine molasses, soy sauce, vinegar, and garlic powder to make a substitute.
Food Coloring: Omit food coloring if desired. It will still taste delicious and inviting.

Grill: For extra smoke, you can grill the pork over low heat, simulating the traditional charred exterior.

Stabilization time: Long exposure increases depth of flavor, so patience is important.
