Low-Carb Chocolate Cottage Cheese Mousse

Ingredients:
One cup of cottage cheese (low-fat, ideally)
Two to three teaspoons of cocoa powder without sugar

Two to three teaspoons of low-carb sweetener (stevia or erythritol, depending on taste)
A touch of salt, one teaspoon of vanilla extract, and optional sugar-free nuts or chocolate chips as a garnish

Instructions:

  1. Blend Ingredients: Put the cottage cheese, cocoa powder, sweetener, vanilla extract, and salt in a food processor or blender. Blend till creamy and smooth.
  2. Taste and Adjust: After tasting the mousse, adjust the amount of cocoa powder or sweetness as needed.
  3. Chill: To firm up, move the mousse to serving dishes and place them in the refrigerator for at least half an hour.
  4. Serve: If preferred, top with nuts or sugar-free chocolate chips. Have fun!
