Ingredients:
Four big russet potatoes, cleaned and chopped
One-fourth cup of olive oil
One packet of ranch seasoning blend
One cup of cheddar cheese, shredded
1/4 cup of Parmesan cheese, grated
Two teaspoons of freshly chopped parsley, if desired
To taste, add salt and pepper.
Directions:
Preheat Oven: Turn the oven on to 400°F, or 200°C. Put parchment paper on a baking pan.
To prepare the potatoes, place them in a large dish and toss them with salt, pepper, ranch seasoning mix, and olive oil until they are uniformly covered.
Bake: Line the prepared baking sheet with a uniform layer of potatoes. Stir halfway through and roast for 25 to 30 minutes, or until brown and crispy.
Add Cheese: Top the potatoes with grated Parmesan and shredded cheddar cheese. Put it back in the oven and bake it for five more minutes, or until the cheese is bubbling and melted.
To serve, move the cheesy ranch potatoes to a platter and, if you’d like, top with freshly chopped parsley.
Remarks:
Before serving, add some chopped bacon bits for taste.
