For a cold night, this creamy tortellini soup is the ideal comfort food. It’s simple to prepare and bursting with flavor. This classic soup is enhanced with flavorful ingredients such as sausage, spinach, and Parmesan cheese.
INGREDIENTS:
- One tablespoon of olive oil
- One pound of deboned Italian sausage
- One chopped onion
- 2 carrots, chopped
- Two sliced celery stalks
- Three minced garlic cloves
- Four cups of chicken stock
- One 28-oz can of chopped tomatoes
- One fifteen-ounce can of washed and drained black beans
- One fifteen-ounce can of drained corn
- One box (9 ounces) of chilled tortellini
- One cup of freshly chopped spinach
- Grated Parmesan cheese, half a cup
To taste, add salt and pepper.
INSTRUCTIONS:
- In a large pot over medium heat, warm the olive oil.
- After adding, sauté the sausage until browned.
- Cook the celery, onion, carrots, and garlic in the pot until they are tender.
- Add the corn, tomatoes, black beans, and chicken broth and stir.
- Bring to a boil, then simmer for 15 minutes on low heat.
- Add the tortellini and cook it as directed on the packet.
- Add the Parmesan cheese and spinach and stir.
- To taste, add salt and pepper for seasoning.
