CABBAGE AND EGGS

1 tablespoon olive oil or butter I prefer a blend of the two
one minced garlic clove
One cup of finely shredded cabbage, lightly packed
Two eggs, lightly beaten
To taste, add salt and pepper.

A nonstick pan should be heated to medium heat.
Spread the oil or butter mixture across the pan after adding it.
After adding the garlic, let it about 20 seconds to start aromatic.

Add in the cabbage and simmer, stirring constantly, until it softens, about 3-5 minutes. For me, it takes a minute or two longer to heat it till it starts to caramelize.

The cabbage should be dispersed thinly.

Pour in the eggs and spread them evenly by tilting the pan slightly.

After letting the eggs cook for ten to fifteen seconds, gently fold them over to ensure they are well cooked.

Take off the heat and serve right away!
