INGREDIENTS:
For the Cream:
One egg
A small amount of salt
8g (1 tsp) sugar with vanilla
60g (4 tablespoons) of sugar
40g (four tablespoons) cornmeal
One cup, or 250ml, of milk
two teaspoons of lemon juice
15 tbsp (30 g) butter
Regarding the Cake:
Two apples (one thinly cut, one diced)
One tablespoon of sugar
two eggs
A small amount of salt
8g (1 tsp) sugar with vanilla
Sugar, 120g (0.6 cup)
1/2 cup, or 100ml, of vegetable oil
Warm milk, 130ml (1/2 cup)
1.75 cups (280g) of flour
Two tsp (16g) of baking powder
50 grams of raisins
One yolk from an egg
Two tablespoons of milk (for the egg wash)
Powdered sugar (optional) for garnishing
INSTRUCTIONS:
Prepare the Cream:
Beat one egg, salt, vanilla sugar, and sixty grams of sugar in a pot.
Stir add milk and cornstarch until smooth.
Stirring constantly, cook over medium heat until thickened.
Take off the heat and blend in the butter and lemon juice until smooth.
Place a plastic wrap immediately over the surface and allow it to cool fully.
Prepare the cake batter:
Set the oven temperature to 180°C (356°F). Pinch of parchment paper to line a 24cm baking tray.
Whisk together eggs and salt in a large bowl.
After adding the 120g of sugar and vanilla sugar, mix until frothy and light.
Stir in heated milk and vegetable oil gradually.
Mixing gradually until smooth, sift flour and baking powder into mixture.
Add the raisins and diced apples and mix.
To assemble and bake, transfer half of the cake batter into the baking pan that has been ready.
Evenly distribute the chilled cream over the mixture.
Evenly distribute the leftover batter over the cream after pouring it on.
Place the thin apple slices in a row over top.
Brush the apple slices with a mixture of egg yolk and two tablespoons milk.
If a toothpick is inserted, it should come out clean after 45 minutes of baking.
Allow the cake to cool in the pan, then turn it out onto a wire rack to finish cooling.
If desired, dust with powdered sugar prior to serving.
