INGREDIENTS:
- 1 can (28 oz) whole tomatoes with juice
- 2 cans (10 oz each) Rotel diced tomatoes and green chilies
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 whole jalapeño, quartered and sliced thin
- 1/4 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/2 cup chopped cilantro (more to taste!)
- Juice of 1/2 lime
INSTRUCTIONS:
- Add the Rotel diced tomatoes, green chilies, and whole tomatoes with their juice to a large mixing bowl.
- To the bowl, add the sliced jalapeño, diced onion, and minced garlic.
- Add the ground cumin, sugar, and salt. Mix everything thoroughly by stirring it all together.
- To suit your taste, add the chopped cilantro and fold gently.
- Add half a lime’s juice and stir once more.
- If necessary, taste your salsa and adjust the seasoning by adding additional cilantro, salt, or lime juice.
- For the salsa’s tastes to meld harmoniously, let it sit for at least half an hour.
