INGREDIENTS:
One cup of peanut butter that is creamy
1/4 cup softened unsalted butter
One teaspoon of vanilla extract
Two cups of sugar powder
Two cups of chocolate chips that are semi-sweet
Two teaspoons of coconut oil or shortening (optional)
INSTRUCTIONS:
- Combine the filling:
Combine the softened butter, peanut butter, and vanilla essence in a big basin and stir until thoroughly blended.
Add the powdered sugar gradually while stirring to make the mixture smooth and dough-like. - Form the Balls: Roll the peanut butter mixture into tiny balls, approximately one inch across, and arrange them on a parchment paper-lined baking sheet.
The balls should be frozen for 20 to 30 minutes, or until they are firm. - heat the Chocolate: In a bowl that can be placed in the microwave, heat the chocolate chips and, if using, shortening or coconut oil in 30-second increments, stirring after each one until the mixture is smooth and completely melted.
- Dip the Balls: Make sure each peanut butter ball is completely coated by dipping it into the melted chocolate with a fork or toothpick. Let the extra chocolate fall off.
Return the balls covered in chocolate to the parchment paper. - Set the Chocolate: Either let the chocolate to set at room temperature or place the balls in the refrigerator for ten to fifteen minutes to solidify the chocolate.
