Ingredients:
One and a half pounds of skinless, boneless chicken thighs; one tablespoon of olive oil; and half a teaspoon of salt
1/4 teaspoon black pepper, 4 minced garlic cloves, 1/4 cup lemon juice, 1/4 cup cubed butter, 1/4 cup chopped fresh parsley, and 1 pound of trimmed green beans
Directions: * Prepare the chicken: Sprinkle salt and pepper on the chicken thighs.
- To sear the chicken, heat a large skillet over medium-high heat with olive oil. Cook the chicken thighs for 4–5 minutes on each side, or until they are browned.
- Add lemon and garlic: Add the minced garlic to the skillet and stir continuously for 30 seconds. Add the lemon juice after that.
- Add the butter and simmer for 10 minutes, or until the chicken is cooked through. Lower the heat to low. One by one, add the butter cubes and stir until they melt. Cook the green beans: In a different pot of boiling salted water, cook the green beans for 3–4 minutes, or until crisp-tender, while the chicken is simmering.
After draining, combine the cooked green beans with the chicken and sauce in a skillet and serve. Toss to coat. Serve right away after adding some fresh parsley.
Advice: * If you’d like, you can use chicken thighs with the bones in. Adapt the cooking time appropriately. Use half a lemon’s zest in addition to the juice for a stronger lemon taste.
