A great way to use up leftover mashed potatoes, these Cheesy Mashed Potato Puffs are fluffy and cheesy on the inside and crispy on the outside.
Ingredients
Two cups of freshly prepared or leftover mashed potatoes
One cup of cheddar cheese, shredded
1/4 cup of Parmesan cheese, grated
Two huge eggs
1/4 cup of milk
Two chopped green onions
To taste, add salt and pepper.
Half a teaspoon of powdered garlic
Half a teaspoon of optional smoked paprika
INSTRUCTIONS:
- Preheat Oven: Lightly grease a muffin tray and preheat your oven to 400°F (200°C).
- Combine the ingredients:
Mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, smoked paprika, garlic powder, salt, and pepper should all be combined in a big bowl. Mix thoroughly until creamy and smooth. - Fill Muffin Tin: Using a spoon, fill each muffin tin cup approximately three-quarters of the way to the top with the potato mixture.
- Bake: Bake the puffs for 20 to 25 minutes, or until the tops are brown.
- Serve Warm: Before taking them out of the muffin tray, let them cool somewhat. Enjoy the cheesy, fluffy bliss while it’s still warm!
