Ingredients
Two cups of packed all-purpose flour (do not add baking powder or salt if using self-rising flour)
If using self-rising flour, omit the 1 tablespoon of baking powder.
If you are using self-rising flour, omit the ½ tsp salt.
½ cup salted butter, sliced into small pieces (use ¼ tsp additional salt if using unsalted butter).
One cup of milk, either buttermilk or ordinary
Instructions
Turn the oven on to 400 degrees Fahrenheit.
Mix the flour, baking powder, and salt together in a large bowl. Add a small amount of butter.
Mix the flour mixture and butter with your hands (or a pastry blender) until the butter is pea-sized and the dough is crumbly.
Using a wooden spoon, stir in the milk until thoroughly combined, being careful not to overmix.
Roll out the dough to about ¾ inch thick on a floured surface.
Use a cookie or biscuit cutter to cut out biscuits. Place each on an iron skillet or cookie sheet that has not been oiled. To increase the biscuits’ rise during baking, make sure they touch.
Bake until golden, about 10 minutes.
