Ingredients:
ground beef weighing 1 to 1.5 pounds
One can of ranch-style beans
One can of rotel
One can of drained whole kernel corn
One can of cream-style corn
Two boxes of jiffy cornbread mix (to prepare the cornbread as directed, you’ll need milk and eggs).
Instructions:
- Turn the oven on to 400°.
- Brown ground beef in a big skillet with your preferred seasonings. I typically use salt, cumin, chili powder, and onion and garlic powder. When the meat is done, drain it.
- To the ground beef, add rotel, beans, and whole kernel corn. While you make the cornbread, bring to a boil and then reduce the heat to simmer.
- Combine the two boxes of cornbread mix and the remaining ingredients in a mixing dish.
