Ingredients:
Two cups of fresh blueberries and two cups of cottage cheese
Three huge eggs
- 1/4 cup honey or maple syrup
- 1/2 cup almond flour or gluten-free flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla essence
Half a teaspoon of cinnamon
A pinch of salt
Instructions:
Grease a baking dish and preheat the oven to 350°F (175°C).
- Put the cottage cheese, eggs, honey, and vanilla extract in a big bowl. Blend thoroughly until smooth.
- Mix the almond flour, baking powder, salt, and cinnamon in a separate basin.
- Stir just until mixed after adding the dry ingredients gradually to the wet mixture.
- Take care not to shatter the blueberries as you gently fold them in.
- Evenly distribute the batter after pouring it into the baking dish that has been oiled.
- Bake until brown on top and a toothpick inserted in the center comes out clean, 30 to 35 minutes.
- Before slicing and serving, let it cool slightly. Warm or room temperature, enjoy.
