Blueberry Cottage Cheese Breakfast Bake

Ingredients:
Two cups of fresh blueberries and two cups of cottage cheese
Three huge eggs

  • 1/4 cup honey or maple syrup
  • 1/2 cup almond flour or gluten-free flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
    Half a teaspoon of cinnamon
    A pinch of salt

Instructions:

Grease a baking dish and preheat the oven to 350°F (175°C).

  1. Put the cottage cheese, eggs, honey, and vanilla extract in a big bowl. Blend thoroughly until smooth.
  2. Mix the almond flour, baking powder, salt, and cinnamon in a separate basin.
  3. Stir just until mixed after adding the dry ingredients gradually to the wet mixture.
  4. Take care not to shatter the blueberries as you gently fold them in.
  5. Evenly distribute the batter after pouring it into the baking dish that has been oiled.
  6. Bake until brown on top and a toothpick inserted in the center comes out clean, 30 to 35 minutes.
  7. Before slicing and serving, let it cool slightly. Warm or room temperature, enjoy.
