healthy pickled beets recipe

Ingredients:
Eight fresh beets, medium
One cup of vinegar
Half a cup of sugar

One and a half teaspoons of whole cloves
One and a half teaspoons of whole allspice
Half a teaspoon of salt

Instructions:
Trim the tops to 1 inch and scrub the beets. Put in a Dutch oven and cover with water. Bring to a boil. Reduce heat and simmer until soft, covered, 25 to 30 minutes. Take out of the water and let it cool. After peeling and slicing the beets, put them in a basin and put it aside.
Add the vinegar, sugar, cloves, spices, and salt to a small saucepan. Bring to a boil and leave for five minutes. Cover with beets. Put in the fridge for at least one hour. Before serving, drain.
