Ingredients
One pound of jumbo shrimp, cooked, skinned, and chopped
Half a cup of red onion, chopped
One tomato, chopped
One avocado, chopped
One teaspoon of olive oil (extra virgin)
One lime’s juice
Half a teaspoon of salt
One-sixth teaspoon of pepper
One tablespoon of cilantro, chopped
One jalapeño, coarsely chopped and seeded
Directions
- Get the dressing ready. Add the chopped red onion, fresh lime juice, olive oil, salt, and black pepper to a large mixing bowl.
Give the mixture five minutes to sit. By doing this, the onions are able to pickle a little, which lessens their harshness and adds flavor to the dressing. - Put the salad together. Add the cooked shrimp, diced avocado, finely chopped jalapeño, and diced tomato to a different bowl.
- Put Everything Together Pour the lime dressing into the bowl and add the shrimp, avocado, and vegetable mixture.
Gently toss everything together, being careful not to mash the avocado, and sprinkle the chopped cilantro over top. - Modify the seasoning If necessary, add more salt or pepper after tasting the salad.
- Present and Savor Serve right away as a salad on its own, as a cool appetizer, or as a taco or lettuce wrap filler.
