Meatball boat

2 pounds minced beef
2 eggs
1 cup bread crumbs
1/4 cup fresh parsley + 2 tablespoons chopped and divided
6 garlic cloves, minced and divided
1 teaspoon salt
1/2 teaspoon pepper
Vegetable oil
4 soft rolls
8 slices of mozzarella cheese
1 cup marinara sauce
1/4 cup melted butter
Fresh grated Parmesan cheese

Directions Make a meatball boat
In a large bowl, combine ground beef, eggs, and breadcrumbs. A quarter cup of parsley, 3 garlic cloves, salt and pepper. Shape the ground meat mixture into balls the size of golf balls.
Heat a cast iron skillet or skillet with oil over medium to high heat.
Cook the meatballs until golden brown. Transfer the meatballs to a plate then remove the pan from the heat. Preheat the oven to 350°F.
Place the soft buns on the baking tray. Use a knife to cut off the top of the roll and press it inward to create a boat shape.
Mix the melted butter with 3 cloves of garlic and 2 tablespoons of parsley.
Spread garlic butter over the roll. Bake for 5 minutes or until toasted.
Place two slices of mozzarella on the roll. Spread a spoonful of marinara over the cheese.
Place three meatballs in the boat and drizzle more marinara sauce over them.
Bake for 25 minutes or until the cheese melts. Garnish with parmesan.
