Low Carb Cheeseburger Skillet

Ingredients
2 pounds ground beef (80/20 works well)
1 packet (1 ounce) dry onion soup mix or taco seasoning
2 cups shredded cheddar cheese
1 cup diced tomatoes or pickles, for serving

Salt, black pepper, and a little oil for the skillet are considered free pantry staples. Optional: lettuce, avocado, bacon, or a drizzle of burger sauce.

Directions
Heat a large skillet over medium-high heat with a little oil.

Add the ground beef and cook until browned and crumbled, about 7 to 8 minutes. Drain off excess grease.

Add 1/4 cup water and the taco seasoning or dry onion soup mix. Cook for three to four minutes, or until the beef is well covered with sauce.

In the skillet, arrange the beef in a uniform layer. Over the top, scatter the grated cheddar.

Cook over low heat for 3 to 5 minutes, or until the cheese is melted and bubbling, with a cover on the skillet.

Sprinkle the chopped pickles or tomatoes on top and take off the heat. If desired, garnish with lettuce, avocado, or bacon.

Serve immediately from the skillet, hot.

Alternative Forms
Skillet Bacon Cheeseburger: Before melting the cheese, drizzle some crumbled, cooked bacon on top.

Swiss Skillet with mushrooms: Use Swiss cheese and sautéed mushrooms with the beef.

Spice Skillet: Add diced jalapeños or red pepper flakes to the pepper jack cheese.

Breakfast Skillet: Instead of tomatoes, top with fried eggs.

Expert Advice: Taco Skillet: Serve with salsa, sour cream, and avocado. Use taco spice.
Ground beef with an 80/20 ratio should be used. The beef is kept juicy and delicious by the fat.

Make sure the grease is drained thoroughly so the cheese melts smoothly instead of collecting in a pool of oil.

While the cheese is melting, cover the skillet. It melts consistently due to the heat that has been contained.

Remove the heat and add fresh toppings to keep them crunchy.

Serve right away, when the beef is hot and the cheese is gooey.
