INGREDIENTS:
1 cup flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon red pepper
1 teaspoon salt
1/2 teaspoon black pepper
4 thin pork chops
2 tablespoons bacon fat
2 tablespoons olive oil
2 cups buttermilk
Chopped fresh parsley or scallions, for garnish, optional
INSTRUCTIONS:
Mix flour, flour onion, garlic powder, red pepper, salt and black pepper into the pie plate. Coat pork chops with flour mixture; Eliminate redundancy.
Over medium heat, add oil and fat to a cast iron pan and melt evenly. Carefully place pork chops in pan; Fry for about 5 minutes on each side until golden brown. Remove pork ribs from pan.Mix together ½ cup flour mixture and buttermilk; Pour into pan, add hot fat and stir well; Bring the sauce to a boil, then reduce heat and cook until thickened, stirring frequently.
Put the pork ribs in the pan; covered with sauce. Simmer for about 5 minutes until the pork ribs are cooked.
Season with salt and pepper; Garnish with chopped parsley or green onions, if using, before serving.
