INGREDIENTS:
Three cups cold mashed potatoes, one large egg, 1 cup grated cheddar cheese, 1/4 cup chopped chives, 1/4 cup all-purpose flour, and 1/2 teaspoon garlic powder.
A quarter cup of grated Parmesan cheese, reserved for each individual
cooking spray or ghee for use it
INSTRUCTIONS:
- Spray or grease a mini muffin pan with cooking spray and set the oven temperature to 400°F (200°C).
- In a large mixing bowl, whisk together the grated cheddar cheese, chives, frozen potatoes, eggs, flour, garlic powder, salt, and pepper.
- Spread each dough ball with Parmesan cheese and roll into 1-inch balls.
- Gently push the buttered potato balls into the muffin tin to fluff them.
- The pies should be baked for 15 to 20 minutes or until the tops are golden brown and gooey.
- Step 6: After it has cooled for a few minutes, remove it from the pan. Serve while still hot and enjoy !

These little monsters are great for cooling. Let it cool on the baking sheet for a few minutes then place it in a freezer bag. Place it in the oven until it becomes soft and delicious and serve. Reduce the fat by replacing half the potatoes with a full casserole and adding some cheese.
