INGREDIENTS:
4 boneless, skinless chicken breasts
1 cup chopped broccoli florets, drained and finely chopped
1 cup grated cheddar cheese (or another cheese you like)
Salt and pepper to taste
2 tablespoons olive oil
1 1 teaspoon garlic
1 teaspoon red pepper
1 teaspoon dried thyme
INSTRUCTIONS:
Preheat your oven to 190°C (375°F) and grease the baking dish with cooking oil or olive oil.
Prepare the chicken breasts by cutting them into pieces, creating a pocket on the side of each breast without going through them. To complete this you must create an opening.
To combine, mix grated cheese and chopped broccoli in a large bowl. Salt, pepper and stir until well combined.
Divide one into each of four pieces of chicken fillet stuffed with cheese-broccoli mixture. The edges of the chicken should be pressed together to seal completely.
