INGREDIENTS:
1 cup oatmeal (90g)
50g cranberries
Zest of 1 lemon
1/4 cup walnuts, chopped (30g)
1/4 cup dates, chopped (35g)
1 egg
2 tablespoons butter, melted (30g)
INSTRUCTIONS:
Preheat Oven: Line a baking sheet with parchment paper and preheat your oven to 180°C (360°F).
Combine Dry Ingredients: Put 1 cup oats, 50g cranberries, lemon zest, 1/4 cup chopped walnuts, and 1/4 cup chopped dates in a big bowl. Stir thoroughly.
Get Wet Ingredients: Beat one egg and two tablespoons of melted butter in a another bowl. Stir until thoroughly blended.
Mixtures should be well mixed by adding the wet elements to the dry ingredients and stirring.
Form Cookies: Using the back of a spoon, slightly flatten each spoonful of the mixture as you scoop it onto the baking sheet that has been prepared.
Bake: Bake the cookies for 30 minutes in a preheated oven, or until they are firm and golden brown.
Cool: After a few minutes of cooling on the baking sheet, move the cookies to a wire rack to finish cooling.
