INGREDIENTS:
Two chicken breasts, chopped
two cloves of minced garlic
two cups of cooked white rice, chilled
One cup of mixed veggies, including maize, carrots, and peas
Two beaten eggs
Two tablespoons of soy sauce
One tablespoon of sesame oil
To taste, add salt and pepper.
Garnish with green onions (optional).
INSTRUCTIONS:
Heat some oil in a big wok or skillet over medium-high heat. Cook the minced garlic and diced chicken until the garlic is aromatic and the chicken is cooked through.
Place the beaten eggs on one side of the skillet and push the chicken to the other. Eggs should be scrambled until cooked through.
Cook the mixed vegetables in the skillet until they become soft.
Stir-fry everything together, breaking up any rice clumps, after adding the cold rice to the skillet.
After adding sesame oil and soy sauce to the rice mixture, stir-fry it until it’s done.
