INGREDIENTS:
Eight cups of vegetable oil for frying
Every Purpose Two cups of flour
1/4 cup cornstarch
Two tablespoons of sugar
Two tablespoons of salt
Half a teaspoon of baking powder
Baked soda: half a teaspoon
One half teaspoon of onion salt
One-half teaspoon of paprika
1/4 teaspoon of ground black pepper
Soda Club: 16 ounces
Two pounds of cod or white fish, divided into 3-ounce portions
INSTRUCTIONS:
In a big saucepan or fryer, heat 8 cups of vegetable oil to 350°F.
In a bowl, combine flour, cornstarch, sugar, salt, baking soda, baking powder, paprika, black pepper, and onion salt.
Club soda should be added gradually to the dry mixture while being constantly stirred until the batter foams.
Make sure the fish pieces are evenly coated by dipping them into the batter.
