INGREDIENTS:
Unsalted butter (8 ounces)
3/4 cup of sugar, granulated
1/4 teaspoon of salt
Pure vanilla extract (1 1/2 tsp)
A single big egg yolk
Two cups of all-purpose flour
INSTRUCTIONS:
Creamy and smooth, beat together butter, sugar, salt, and vanilla.
Add the egg yolk and stir until completely combined, scraping down the bowl’s sides as necessary.
Stir in the flour just until combined.
Knead the dough a few times until it is smooth after transferring it to a lightly floured surface.
Form the dough into a log, cover with plastic wrap, and place in the refrigerator for a few hours (or freeze for later).
Line baking pans with parchment paper and preheat the oven to 325°F.
Cut the dough into rounds that are 1/8 inch thick, then arrange them on the sheets about an inch apart.
Bake until the edges are just starting to turn brown, 16 to 18 minutes.
Before serving, let it cool.
