Ingredients:
One pound of 90% or 85% lean ground beef
Three big russet potatoes, cut into 1/4-inch thick slices
Two sweet onions, cut into 1/4-inch thick slices
One can of diced tomatoes, ideally roasted over a fire
Two medium-sized sliced green bell peppers
To taste, add salt and pepper. Additional ingredients are optional. Half a teaspoon of garlic powder, one teaspoon of crushed red pepper, one tablespoon of sliced butter, and pepperoncini
Instructions:
- Spray nonstick cooking spray on a 9 x 13-inch baking or casserole dish and preheat the oven to 350°F (175°C).
- Cook the ground beef in a big skillet over medium-high heat for about 8 minutes, or until it is no longer pink. If desired, add crushed red pepper, garlic powder, salt, and pepper for seasoning.
- Arrange the sliced potatoes in a layer at the bottom of the prepared dish. If using, add butter and season with salt and pepper. Place the cooked ground beef on top, followed by the onion slices. Season with salt and pepper, add the diced tomatoes, and bell peppers.
- Cover the dish with foil and bake for 2 hours. Notes: For extra taste, consider topping with pepperoncini before baking. Recipe Data:
