Pancake Sausage Casserole
The perfect breakfast bake with layers of fluffy pancake batter and savory sausage!
Ingredients:
Two cups of pancake mix
Half a cup of milk
One egg
Half a teaspoon vanilla extract
One pound of cooked and crumbled breakfast sausage
Half a cup of maple syrup
One-half cup of optionally shredded cheddar cheese
Directions:
Turn the oven on to 375°F, or 190°C. A 9 x 13-inch baking dish should be greased.
Combine pancake mix, milk, egg, and vanilla in a bowl and stir until well combined.
Fill the dish with half of the batter. On top, sprinkle the cooked sausage.
Drizzle the sausage layer with maple syrup. If using, top with cheddar cheese.
Cover with the remaining batter.
Bake for 25 to 30 minutes, or until the center is firm and golden brown.
Before slicing, allow it cool slightly. Warm up and drizzle with more maple syrup.
