Dinner tonight was a hit! Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken that’s bursting with flavor and cheese!
Ingredients:
4 boneless, skinless chicken breasts
One cup of sliced roasted red peppers
One cup of fresh spinach
One teaspoon of garlic powder, two tablespoons of olive oil, and one cup of shredded mozzarella cheese
One teaspoon of Italian spice
To taste, add salt and pepper.
Instructions:
- Set the oven temperature to 375°F (190°C).
- Create a pocket by making a deep cut down the side of each chicken breast. Take care not to cut through completely.
- Place equal amounts of mozzarella cheese, spinach, and roasted red peppers inside each chicken breast.
- If required, use toothpicks to seal the opening.
- Combine the olive oil, Italian seasoning, garlic powder, salt, and pepper in a small bowl. Apply this mixture to the chicken breasts on both sides.
- Fill a baking dish with the packed chicken breasts, and bake for 25 to 30 minutes, or until the chicken is cooked through and no longer pink inside. 15 minutes for preparation; 30 minutes for cooking; and 45 minutes for the entire process
