Ingredients:
One pound of breakfast sausage
Two teaspoons of butter
A quarter cup of all-purpose flour
Two cups of milk
To taste, add salt and pepper.
Four cups of tater tots, frozen
Four big eggs
One cup of cheddar cheese, shredded
Fresh chives chopped for garnish (optional)
Instructions:
Set the oven temperature to 425°F (220°C).
The morning sausage should be cooked through and browned after being fried in a big skillet over medium heat. Take out and place aside from the skillet.
Melt the butter in the same skillet over medium heat. Add the flour and whisk until smooth.
Stirring continuously, gradually whisk in the milk until the liquid thickens and reaches a simmer.
To taste, add salt and pepper.
Add the cooked morning sausage back to the skillet and mix thoroughly.
Arrange the frozen tater tots on a baking sheet in a single layer.
Bake for 20 to 25 minutes in a preheated oven, or until crispy and golden brown.
Fry the eggs to your preferred doneness while the tater tots are baking.
Divide the tater tots among four serving bowls to assemble the breakfast bowls.
Place a fried egg, some of the sausage gravy, and some shredded cheddar cheese on top of each bowl.
Serve hot, garnished with chopped fresh chives if preferred.
