Ingredients:
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
- 6 medium flour tortillas
- 1 can (16 ounces) refried beans
- 1 can (10 ounces) red enchilada sauce
- One cup of cheddar cheese, shredded
- One cup of pepper, shredded -jack cheese
- One diced Roma tomato
- One chopped green onion
- One small can of black olives, sliced
Directions:
- Set the oven’s temperature to 375°F. Apply nonstick cooking spray to two baking sheets. On each sheet, arrange three tortillas.
- Bake the tortillas for three to five minutes, then turn them over and continue baking for two to five more minutes, or until they are golden and crispy. Put aside.
- Over medium-high heat, fry and shred the ground beef in a pan. Empty the grease.
- Bring the meat to a boil, then lower the heat to medium-low after adding the taco seasoning and water. After 10 minutes of simmering, leave aside.
- Warm the refried beans in a bowl that is safe to use in the microwave. Cover one tortilla with a thin layer of beans.
- Put another tortilla on top after adding one-third of the meat mixture.
- Cover the top tortilla with 3 tablespoons of enchilada sauce. Add some pepper-jack and cheddar cheese. Add the sliced black olives, green onion, and diced tomato.
- To make a total of three pizzas, repeat this procedure with the remaining tortillas.
- Bake the pizzas until the cheese is bubbling and melted, about 5 minutes. Before cutting into slices and serving, let them cool slightly.
