Homemade Mexican Pizza

Ingredients:

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 ounces) refried beans
  • 1 can (10 ounces) red enchilada sauce
  • One cup of cheddar cheese, shredded
  • One cup of pepper, shredded -jack cheese
  • One diced Roma tomato
  • One chopped green onion
  • One small can of black olives, sliced

Directions:

  1. Set the oven’s temperature to 375°F. Apply nonstick cooking spray to two baking sheets. On each sheet, arrange three tortillas.
  2. Bake the tortillas for three to five minutes, then turn them over and continue baking for two to five more minutes, or until they are golden and crispy. Put aside.
  3. Over medium-high heat, fry and shred the ground beef in a pan. Empty the grease.
  4. Bring the meat to a boil, then lower the heat to medium-low after adding the taco seasoning and water. After 10 minutes of simmering, leave aside.
  5. Warm the refried beans in a bowl that is safe to use in the microwave. Cover one tortilla with a thin layer of beans.
  6. Put another tortilla on top after adding one-third of the meat mixture.
  7. Cover the top tortilla with 3 tablespoons of enchilada sauce. Add some pepper-jack and cheddar cheese. Add the sliced black olives, green onion, and diced tomato.
  8. To make a total of three pizzas, repeat this procedure with the remaining tortillas.
  9. Bake the pizzas until the cheese is bubbling and melted, about 5 minutes. Before cutting into slices and serving, let them cool slightly.
