Deep Dish Apple Crisp

I developed this recipe as an experiment, motivated by my love for applesauce but my reluctance to devote time to making the crust. The recipe is simple and quick and makes a delicious and comforting dessert when served warm with ice cream. Unfortunately, my husband couldn’t bear to dig into the subject before taking photos.
I made this dish yesterday and I absolutely loved it. Although there were many positive comments about the recipe, I, like many people, thought the top part was too long. Since this wasn’t mentioned in the instructions, I assumed it was intentional. With four special Granny Smith apples in an 8-inch deep container, me and my family did not like the final product. Even though there was a lot of apples, the topping wasn’t overpowering but had just enough flavor. Like everyone else, I love apple pie with toppings.

Enough peeled and colored apples to cover bottom of 8-inch apple pie

Top:

2 eggs

1 cup sugar (set aside a quarter cup and add a teaspoon of cinnamon)
2 tablespoons melted butter or margarine

1 cup flour

1 teaspoon baking powder

1 teaspoon vanilla

Mix all the first ingredients except the reserved sugar. Sprinkle the cinnamon sugar over the apples and pour the rest of the mixture over them.

Bake in a 350 degree oven for 40-45 minutes or until the top is golden brown.
