Quick Pineapple Bread

Quick Pineapple Bread:

2 cups flour

1 can (20 oz) crushed pineapple (drained, but reserve juice 2 tablespoons heavy cream)

1/2 cup heavy cream

1 cup sugar

3 oz cream cheese (soft)

1 teaspoon baking powder

1 teaspoon salt

3 teaspoons vanilla extract
1 egg (beaten)

For the glass:

1⅓ cup powdered sugar

2 tablespoons pineapple juice (reserved can)

Start by preheating the oven to 175°C. Also grease a 9 x 5-inch loaf pan.

Take a large bowl and beat the soft cream cheese and sugar until creamy.
Add beaten eggs and vanilla extract.

Add oil, mix.

Sift the flour, baking powder and salt in another bowl. Then slowly mix these dry ingredients with the wet mixture.

Gently fold in the crushed pineapple and reserve 2 tablespoons for the dressing.

Place the dough into the prepared pan and make sure it is flat.

Bake for 60 minutes. The bread is cooked when the inserted toothpicks become visible.

After cooking, leave it in the pan for approximately 10 minutes. Then place it on a rack and let it cool completely.
For the glaze:
Mix powdered sugar with 2 tablespoons reserved pineapple juice until smooth.

Carefully spread this cream on the completely cooled bread.

Allow some time for installation.

  1. Recipe ask for add oil. But in the lust of ingreadience there is no where listed amount or what type oil must be used. Can this be corrected or given info?
