These German potatoes are a nice change from the norm. They make a great dinner when served with Bratwurst sausage. I spread cranberry sauce and maple syrup on it.
INGREDIENTS:
2 large eggs
2 tablespoons flour
¼ teaspoon baking powder
½ teaspoon salt
¼ teaspoon pepper
6 potatoes, chopped
½ cup onion, finely chopped
¼ cup vegetable oil
INSTRUCTIONS:
Beat the eggs, flour, baking powder, salt and pepper in a large bowl; Mix potatoes and onions. Heat the oil in a skillet overheat. Drop spoonfuls of potato mixture into the hot oil in portions. Press to flatten. Cook until brown and crispy, about 3 minutes per side. Transfer to a paper plate towel-lined. Repeat with remaining potato.
