INGREDIENTS:
2 cups boiled chicken, shredded
1 onion, chopped
1 red pepper, chopped
1 jalapeño, chopped
1 cup taco sauce
20 taco-sized tortillas
3 cup shredded cheddar cheese
3 cups shredded Monterey jack cheese

How to make Flower Quesadilla
Preheat oven to 375°F. Line a baking sheet with parchment paper. In a large bowl, add chicken, onion, red pepper, jalapeño, and taco sauce and mix. Set aside.
Cut each tortilla in half.Add about 2 tablespoons each of cheddar cheese, Monterey Jack cheese, and chicken mixture to each tortilla half.
Roll the tortilla into a cone, starting at the cut edge and being careful not to push the ingredients out of the tortilla.
Place a wide-mouthed jar or glass in the center of the baking tray.
Make a circle around the pot with about 13 tortilla cones. The tip of the cone should be in the middle and touching the pot.Sprinkle cheddar and Monterey Jack cheese over layer. Repeat with remaining cones to create 2 more layers, finishing with remaining cheddar cheese and Monterey Jack.
Take the pot out of the middle of the ring. Bake until the cheese melts and the edges of the tortilla are crisp, 15 to 20 minutes.
Carefully transfer the quesadilla to a serving plate.Place the embed of your choice inside the circle and apply the topping of your choice on top. Serve immediately.
