INGREDIENTS:
One pound of ground beef
1/2 pounds of chorizo sausage
One white onion, diced finely
One diced red bell pepper, two finely chopped and seeded jalapeños, sixteen ounces of cubed Velveeta cheese, one cup of shredded sharp cheddar cheese, one cup of shredded Monterey Jack cheese, and one ten-ounce can of diced tomatoes with green chiles, undrained
half a cup of milk
1/4 cup chopped fresh cilantro, 1 tsp cumin, and black beans
To taste, add salt and pepper.
INSTRUCTIONS
Brown the ground beef and chorizo in a big skillet over medium heat for about 8 minutes, or until cooked through; then, drain excess fat.
To the skillet, add the chopped onion, red bell pepper, and jalapeños. Cook until vegetables are tender, about 5 minutes.
Turn down the heat to low and stir in the milk, chopped tomatoes with chilies, and all the cheeses. Until the cheese has melted completely and the mixture is smooth, stir constantly.
Add cumin, salt, and pepper for seasoning. Right before serving, add the chopped cilantro and stir.
