INGREDIENTS:
Regarding the meat filling:
One pound (500g) of ground beef (or a combination of beef and pig)
One onion, chopped finely
Two minced garlic cloves
Two tablespoons of olive oil
One carrot, cut finely
One celery stalk, cut finely
Half a cup of tomato sauce
One teaspoon of dried oregano
One teaspoon of dried basil
To taste, add salt and pepper.
Half a cup of Parmesan cheese, grated
Regarding the mashed potatoes:
One kilogram (2.2 pounds) of chopped and peeled potatoes
Half a cup of butter
Half a cup of milk
To taste, add salt and pepper.
One egg, if desired, for a deeper texture
For putting together:
One cup of provolone or mozzarella cheese, shredded
For a crispy top, you can optionally add a handful of breadcrumbs.
INSTRUCTIONS:
- Make the mashed potatoes by boiling the chopped potatoes in salted water for 15 minutes or until they are soft.
Add the milk and butter after draining and mashing the potatoes.
Add salt and pepper for seasoning. For more richness, feel free to add one beaten egg. Put aside.
- Prepare the stuffing of meat:
Heat the olive oil in a large skillet over medium heat. After adding the chopped onion and garlic, cook for approximately five minutes, or until they are soft and transparent.
Cook the celery and carrot for a further five to seven minutes, or until they are tender.
As it cooks, stir in the ground beef, breaking it up. Cook for 8 to 10 minutes, or until browned.
Add the basil, oregano, tomato sauce, salt, and pepper. Simmer the ingredients for ten to fifteen minutes, or until the sauce has slightly thickened.
Stir in the grated Parmesan and set the filling aside.
Parmesan - Put the pie together:
Set the oven’s temperature to 180°C (350°F).
Spread half of the mashed potatoes on the bottom of a baking dish that has been oiled.
Evenly distribute the meat mixture over the potatoes using a spoon.
Spread out the remaining mashed potatoes to form an even layer on top.
On top, scatter the provolone or mozzarella cheese shreds. For added crunch, you can optionally sprinkle on some breadcrumbs. - Prepare the pie:
Bake in a preheated oven for 25 to 30 minutes, or until the cheese is bubbling and the top is golden brown. - Offer:
