Ingredients:
Two tablespoons of butter, one tablespoon of olive oil, and four large onions, thinly sliced
Two minced garlic cloves
Half a teaspoon of dried thyme or one teaspoon of fresh thyme
One bay leaf, four cups of beef stock, one cup of chicken broth, and half a cup of optional dry white wine
To taste, add salt and pepper.
Eight toasted baguette or French bread slices
1 1/2 cups of Gruyère cheese, shredded
Directions:
- In a large pot over medium heat, melt butter with olive oil. Add the sliced onions and simmer for 30 to 40 minutes, stirring regularly, until they are golden brown and caramelized.
- Include the bay leaf, thyme, and minced garlic. Continue to cook for one more minute.
- Add the white wine (if using), chicken broth, and beef broth. After bringing the soup to a boil, lower the heat and simmer it for 15 to 20 minutes. To taste, add salt and pepper.
- Get the broiler hot. Fill ovenproof dishes with the soup. Top each bowl of soup with a toasted piece of bread and garnish with grated Gruyère cheese.
- Put the bowls on the broiler for two to three minutes, or until the cheese is melted and bubbling.
- Before serving, carefully take the bowls out of the oven and allow them to cool somewhat.
