French onion soup

Ingredients:
Two tablespoons of butter, one tablespoon of olive oil, and four large onions, thinly sliced

Two minced garlic cloves
Half a teaspoon of dried thyme or one teaspoon of fresh thyme
One bay leaf, four cups of beef stock, one cup of chicken broth, and half a cup of optional dry white wine
To taste, add salt and pepper.
Eight toasted baguette or French bread slices
1 1/2 cups of Gruyère cheese, shredded

Directions:

  1. In a large pot over medium heat, melt butter with olive oil. Add the sliced onions and simmer for 30 to 40 minutes, stirring regularly, until they are golden brown and caramelized.
  2. Include the bay leaf, thyme, and minced garlic. Continue to cook for one more minute.
  3. Add the white wine (if using), chicken broth, and beef broth. After bringing the soup to a boil, lower the heat and simmer it for 15 to 20 minutes. To taste, add salt and pepper.
  4. Get the broiler hot. Fill ovenproof dishes with the soup. Top each bowl of soup with a toasted piece of bread and garnish with grated Gruyère cheese.
  5. Put the bowls on the broiler for two to three minutes, or until the cheese is melted and bubbling.
  6. Before serving, carefully take the bowls out of the oven and allow them to cool somewhat.
