Cheese Shrimp Penne Pasta and Spinach
INGREDIENTS:
1 box Penne Pasta
1 pound shrimp (cooked and drained)
3 cups freshly chopped spinach, kale, or arugula (do not use frozen)
1 cup mozzarella or Swiss cheese
3 Garlic (chopped)
2 tablespoons of salt, black pepper and garlic salt
8 glasses of water
2 tablespoons of oil
1 tablespoon of oil
INSTRUCTIONS:
- Make the card according to the package. Add the pepper to the pasta water during the last 5 minutes of cooking. Cook until it no longer turns brown. Remove all but 1 C of water for the next step. Save the noodles and shrimp.
- Add oil and to a pan over heat. When the butter melts, add the pasta to the pan. Throw on a jacket. Time. Cook for 2_3 minutes, stirring frequently
- Then add the spinach, cook 1 minute until wilted (add ⅓ cup more water if needed to soften/cook the spinach).
- Finally, add the pepper and cheese. Stir gently until the cheese melts. Don’t overdo it. Add more spices to taste. Garnish with dried coriander.
