2 carrots, peeled and chopped
2 celery, diced

INSTRUCTIONS:
Preparation of the beef:
Season the roast beef generously on both sides with salt and pepper.
Heat the olive oil in a large Dutch oven or pan over medium heat. Sear the steaks until golden brown, 3 to 4 minutes on each side. This helps lock in the juices and create a delicious crust.
Prepare the pot:
Transfer the beef roast to the large roasting pan or slow cooker.
