Ingredients:
Lean ground beef, one pound
Four to six Russet potatoes, medium
One one-ounce package of taco seasoning
Half a cup of water
One cup of cheddar cheese, shredded
Half a cup of sour cream
Chopped green onions, ¼ cup
Half a cup chopped tomatoes
Directions:
Get the potatoes ready: After cleaning and washing, use a fork to pierce the potatoes. Bake for 45 to 50 minutes, or until fork-tender, at 400°F (200°C).
Cook the Beef: Brown the ground beef in a pan over medium heat. Empty any extra oil.
Add Seasoning: Mix in ½ cup water and taco seasoning. Simmer until thickened, about 5 minutes.
To assemble, cut the baked potatoes open and use a fork to fluff the insides. Top with the seasoned meat using a spoon.
Place on top and serve: Add diced tomatoes, green onions, sour cream, and cheese. Warm up and serve!
