Easy Mexican Taco Lasagna

This delicious Mexican Taco Lasagna is packed with all the flavors you love about tacos, but in a lasagna format, making it easy to hold and feed a crowd. The best part? Everything can be prepared ahead of time so you can pop it in the oven when you’re ready to eat.

1 pound ground beef
11 oz package of taco seasoning mix
114 oz canned, drained and diced tomatoes
12 inch soft corn tortilla
1 cup your favorite salsa
½ cup torn. Colby
Mexican or taco-style cheese works great too
Here’s how to easily prepare Mexican Taco Lasagna

Preheat the oven to 350 degrees Fahrenheit
Place the ground beef in a deep cast-iron skillet over medium heat. While cooking, make sure to cut it into small pieces and stir frequently. Drain off excess oil before adding other ingredients.
After the ground beef is cooked, add the taco seasoning and tomatoes.
Line a dish with half of your tortillas
Spoon ground beef mixture over tortillas
Place remaining tortillas on top and spread salsa over top tortillas and sprinkle with cheese
Bake in the oven at 350°F for 20-30 minutes or until the cheese is melted and bubbly.
Remove from oven, serve and enjoy!
